21 days matured on our own farm in the Craigantlet Hills. Wonderful roasting joint.  Very lean and tasty.

Eye of Silverside, commonly roasted a s a whole joint in the oven or can be sliced into minute steaks. It has very little marbling and overall  quite a lean cut. If roasting whole, silverside should be regularly basted or partly submerged into liquid to prevent it drying out.
